3 Ways to Enjoy the Last Apples of the Season

We live in apple country. North Central Washington on the shores of beautiful Lake Chelan. Apple orchards deck the edges of the lake and wind their way up the hills. At the end of the season, I buy a variety of apples in bulk from our local market. It's a ritual, a harvest tradition. With twenty pounds of apples (Gala, Early Fuji, and McIntosh) still in our fridge half way through November, I'm digging in to enjoy the last of this season's apples. Here's how:

1. Apple Pandowdy (Food & Wine)  - I love apple pie, but not always the fussy crust. This dessert is apple pie with an easy-peasy top-only crust, and would be the perfect finale for Thanksgiving dinner.


2. Apple Cheddar Muffins (Food52.com) - Apples and cheese? Please! This recipe comes from fiveandspice on Food52. Easy to follow with great flavors and texture. Note: We substituted the barley flour with some local organic emmer flour that typically hangs around in our pantry.

3. Apples and ________ - Yep, that's a blank. Fill it in! One of our my all time favorite snacks is an apple sliced and eaten with cheddar cheese. (It's quickly becoming my eldest son's favorite, too, because what mom likes I like...) We also dip apple slices in almond butter, yogurt with cinnamon and honey, or almost any kind of cheese we can find in the fridge.
